Each province sets its own regulations. You are unlikely to be allowed to practice as a nurse while in Canada on a student visa. You can try to immigrate to Canada, but you will compete with hundreds of thousands of other Indian immigration applicants. Your Indian degree will probably not be recognized for licensing purposes.
